BAKED NEW YORK CHEESE CAKE
Directions
Line a springform tin base with baking paper. Preheat oven on fan bake 180
The Crust
For the crust either whizz up some plain biscuits in the blender till you have a breadcrumb like consistency. Add enough melted Butta to make the mixer hold when pressed into a springform tin. Bake for around 5 minutes.
OR
Blend Half a dozen Anzac cookies (see our recipe) and simply place the ground up cookies at the bottom of the lined springform tin. No need to bake
OR
Choose to have no cookie base, A simple layer of desicated coconut works well too
THE CAKE
In a mixing bowl place:
2 tubs of Cotta
1 T Vanilla
4 T cornflour/starch
zest of 1 lemon
2 T lemon juice
200ml of Coconut cream or if using coconut milk increase the Butta to 2 T
1/4 t salt
1 1/2 t baking powder
1/2 sugar
1/2 ground almonds
1 T melted Savour Butta
Stir briefly till lump free. Pour this cake mix over the crumb base and bake for at least 30 mins.
Check with a wooden skewer. If it needs longer, turn the oven down 150 and continue to bake till done.
Once cooled and removed from the tin decorate with frozen raspberries sprinkled with icing sugar. Enjoy
